摘 要:近年来,消化系统癌症病发率越来越大,造成这种现象的原因之一就是人们日常所食用的蔬菜。研究表明,蔬菜中不仅仅是农药危害人类健康,亚硝酸盐更是危害严重的一种成分。农业上过度的利用氮肥,使得蔬菜中的硝酸盐含量过高,经某些物质转化成亚硝酸盐之后,又会与蛋白质分解产物反应生成亚硝胺,从而引发癌症。经调查显示,在中国膳食中约80%的亚硝酸盐来自于蔬菜。本课题经过探究不一样的储藏条件和储藏时间对根茎类蔬菜中亚硝酸盐含量的影响,指出减少亚硝酸盐对人体危害的方法,以指导人们健康正确食用蔬菜。本试验采用分光光度法,以市场上常见的白萝卜、胡萝卜、藕、山药、荸荠、西兰花、马铃薯七种根茎类蔬菜为实验材料,研究在常温、冷藏两种贮藏条件下,在7天时间中每隔两天测定亚硝酸盐含量。57886

Abstract:In recent years, there is an apparent increase in the number of people who suffers from digestive system cancer. The modern research indicates that the nitrite in the vegetables is an element that does more harm to people than pesticide. Due to the overuse of the nitrogenous fertilizer, the contents of nitrate in the vegetables usually much higher. After these turn into the nitrite, it may protein decomposition product synthesis of nitrosamine, and that may cause gastric cancer and some other diseases. The survey finds that, almost 80% of the nitrite in the food comes from vegetables. This topic chooses to study how the contents of the nitrite in vegetables be effected by different storage and time conditions. I hope this can provide the basis for reducing the nitrites’ harmness to people, so as to guide people eat vegetables safely and rational. This experiment take the Naphthy ethylenediamine clihydrochloride spectrophotometric method to determine the contents of the nitrite of two common tubers vegetables(turnip radish, potatos) in the continual 7 days under normal atmospheric temperature, refrigerate conditions.

1 前言
1.1概述
亚硝酸盐是广泛存在于我们生活中化学物质,我们每天吃的蔬菜中也含有亚硝酸盐,据统计,维持人类健康必要的VC和VA有90%和60%来自于平常所食用的蔬菜[1]。而研究表明,人类所摄入的亚硝酸盐有81.2%来自于蔬菜[2]。根茎类蔬菜因其肥大变态的根部或茎部含有丰富的糖类和蛋白质,且部分根茎类蔬菜含有芳香油深受人们喜爱,是餐桌上不可或缺的食物。参考很多前辈的试验方法以及所得出的结论,在导师的指导下,我们设计出一套检测烟硝酸盐含量的试验方法并对实验数据加以处理,并得出结论,用来指导人们如何正确存放蔬菜,以方便人们健康使用。
