    摘要:稻鸭种养是当下最具潜力的生产模式,而有机物还田也是现在最理想的绿色生态资源循环利用技术,随着人们生活水平的提高,对稻米品质的要求也随之提高,在稻鸭共作的农作系统中配合秸秆、沼肥等有机物还田技术,综合两者的优势,高效、循环利用资源,减少农业污染,保证食品安全。本研究主要是集中于在两种技术配合的模式与常规稻作模式下的稻米品质比较,包括稻米外观品质、碾磨品质以及稻米淀粉和蛋白质特性,明确不同有机物还田和稻鸭共作对稻米品质作用的生理效应,以期为有机物还田的稻鸭共作农作系统提供更多调控发展方向。主要结果如下:有机物(秸秆、沼肥)还田的稻鸭共作农作系统相对于其它处理的稻米淀粉中直链淀粉相对含量下降,蛋白质含量显著增加,而且有机物还田还会提高糙米率、精米率和整精米率,有效的改善稻米的碾磨品质,对降低稻米垩白粒率和垩白度也有一定程度的影响;该处理下稻米淀粉粘滞性相对于其它处理的峰值粘度大、崩解值大、消减值小,稻米食用品质好;稻米淀粉特性各值有相关性。25533

    Effects of Rice-Duck Farming System on Rice Starch and Protein Properties under the condition of Organic Material Return
    Abstract: Rice-Duck Farming System is the most promising mode of production. Returning organic material to field also is now the most ideal green ecological resources recycling technology. With the improvement of people's living standards, the quality of rice requirements also increased. Combining the advantages with straw returning and biogas residue returning could recycle resources efficiently, reduce agricultural pollution, and ensure food safety. This study aims to compare the quality of rice under the two kinds of technology cooperation model with the quality of rice under the conventional rice cropping pattern, including rice starch and protein properties, determine the physiological effects of returning different organic matter to field and rice-duck farming system on rice starch and protein, in order to work for rice-duck farming system of returning organic materials to field to provide more control development direction. In conclusion, compared with other treatments, returning organic materials in the rice-duck farming system decreased the amylose content of rice starch, increased the protein content significantly. And the brown rice rate, milled rice rate and head rice rate were increased and also has a certain degree of influence on reducing the chalky rice rate and chalkiness degree under organic matter return. Therefore, the milling quality of rice was effectively improved. The results show that the rice of this treatment has the larger the peak viscosity of rice starch, the larger the breakdown viscosity, the lower setback viscosity, the better edible quality than the other treatments. The value of rice starch characteristics are correlated with each other.
